Memorial Day Muffins

 Memorial Day Muffins 
(makes 1 dozen)

These delicious fruit-filled muffins can be made in a regular muffin tin with liners or in a cast iron muffin tin.

MUFFIN MIX:
1 1/4 c. flour
1/2 c. sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3/4 c. milk (you can also use buttermilk)
1/4 c. vegetable oil
1 egg
1 c. fresh or frozen fruit (I used blueberries)

CRUMBLE TOPPING:
3 TBSP butter, melted
1/3 c. flour
1/3 c. oats
1/3 c. brown sugar
1/4 tsp. salt
1/4 tsp. cinnamon

  1. Preheat oven to 425 degrees. If you using a regular muffin tin, prepare with liners or spray with cooking oil. If you are using a cast iron muffin pan, place pan in oven to preheat.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  3. In a medium bowl, mix together milk, oil, and egg.
  4. Add milk mixture to flour mixture and stir to combine. Mix in fruit.
  5. Make the crumble topping by combining butter, flour, oats, sugar, salt, and cinnamon. Stir to combine.
  6. Spoon batter into prepared muffin pan. Sprinkle with crumble topping.  If using a cast iron muffin pan, spray with cooking spray after removing from preheated oven.
  7. Bake 18-20 minutes, or until an inserted toothpick comes out clean.  Remove from pans and let cool completely.
