Memorial Day Muffins

These delicious fruit-filled muffins can be made in a regular muffin tin with liners or in a cast iron muffin tin.
MUFFIN MIX:
1 1/4 c. flour
1/2 c. sugar
1/2 c. sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3/4 c. milk (you can also use buttermilk)
1/4 c. vegetable oil
1 egg
1 c. fresh or frozen fruit (I used blueberries)
CRUMBLE TOPPING:
3 TBSP butter, melted
1/3 c. flour
1/3 c. oats
1/3 c. brown sugar
1/4 tsp. salt
1/4 tsp. cinnamon
- Preheat oven to 425 degrees. If you using a regular muffin tin, prepare with liners or spray with cooking oil. If you are using a cast iron muffin pan, place pan in oven to preheat.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
- In a medium bowl, mix together milk, oil, and egg.
- Add milk mixture to flour mixture and stir to combine. Mix in fruit.
- Make the crumble topping by combining butter, flour, oats, sugar, salt, and cinnamon. Stir to combine.
- Spoon batter into prepared muffin pan. Sprinkle with crumble topping. If using a cast iron muffin pan, spray with cooking spray after removing from preheated oven.
- Bake 18-20 minutes, or until an inserted toothpick comes out clean. Remove from pans and let cool completely.
