Silver Dollar City's Succotash Skillet
(serves 4-6)


As a life-long fan of Silver Dollar City, I was thrilled when they posted this recipe to their social media sites.  I made the entire dish on the grill with my cast iron skillets.  The finished product was beyond delicious and the smell brought me right back to those summer vacations!

1 16-oz package frozen, breaded okra
1 cup frozen corn
2 medium yellow squash, sliced into 1/4 in circles
1 small onion, julienne sliced
1 green pepper, julienne sliced
1/2 lb chicken breast
1 tsp garlic powder
1 tsp salt
1 tsp pepper
3 tsp olive oil


  1. In a large skillet, saute onions and peppers in 1 tsp of olive oil.
  2. Remove and add corn and squash. Cook until soft.  (You can combine steps 1 and 2 if you have a big enough skillet.)
  3. Remove vegetables from skillet and add 1 tsp of olive oil and chicken.  Cook until browned and cooked through. (If you are making this recipe on the grill, you can simply put the chicken on the grate and keep your vegetables in the skillet.)
  4. Remove from skillet (or grill) and slice fajita style.  Add to the squash mixture.
  5. Add remaining oil to a medium skillet and heat until oil is hot. Add okra and fry until golden brown.
  6. Combine chicken, squash mixture, and okra in large skillet.  Add salt, pepper, and garlic powder.  Heat through.
***If making on a large enough grill or cooktop, steps 1-2, 3-4, and 5 can be done simultaneously.
