Sprinkle Cake Cookies
(makes 1 1/2 dozen)
These cookies are super easy when you have a craving for fresh-baked cookies. They are so soft and chewy! They also can be easily adapted for any holiday - just change up the sprinkles or substitute the chocolate chips for M&Ms!
1 box white cake mix
2 eggs
1/2 c. vegetable oil
1 c. chocolate chips (you can substitute with M&Ms or 1/2 white chocolate chips, 1/2 chocolate chips)
4 1/2 tsp. Jimmie sprinkles
- Preheat oven to 350 degrees. Prepare cookie sheets by lining with parchment paper.
- Mix oil, eggs, and cake mix until combined.
- Stir in sprinkles and chocolate chips.
- Scoop by tablespoonful onto prepared cookie sheets, 1 inch apart. Top with more sprinkles, if desired.
- Bake 10-12, or until lightly browned. (Use longer time if you prefer a crunchier cookie)
- Let cookies cool on the pan for 2 minutes, then remove to a cooling rack.
Enjoy!
