Sprinkle Cake Cookies

 Sprinkle Cake Cookies

(makes 1 1/2 dozen)



These cookies are super easy when you have a craving for fresh-baked cookies.  They are so soft and chewy!  They also can be easily adapted for any holiday - just change up the sprinkles or substitute the chocolate chips for M&Ms!

1 box white cake mix
2 eggs
1/2 c. vegetable oil
1 c. chocolate chips (you can substitute with M&Ms or 1/2 white chocolate chips, 1/2 chocolate chips)
4 1/2 tsp. Jimmie sprinkles

  1. Preheat oven to 350 degrees. Prepare cookie sheets by lining with parchment paper.
  2. Mix oil, eggs, and cake mix until combined.
  3. Stir in sprinkles and chocolate chips.
  4. Scoop by tablespoonful onto prepared cookie sheets, 1 inch apart. Top with more sprinkles, if desired.
  5. Bake 10-12, or until lightly browned.  (Use longer time if you prefer a crunchier cookie)
  6. Let cookies cool on the pan for 2 minutes, then remove to a cooling rack.
