Sloppy Joe Mac n' Cheese
(serves 4-6)
Move over hamburger helper! This is like glorified mac n' cheese and ya'll know how much I love mac n' cheese. In addition to being super yummy, this meal is also an easy fix for a weeknight. Because the pasta doesn't get pre-cooked, this is a one-pot meal!
1 TBSP vegetable oil
1 medium yellow onion, diced
1 green bell pepper, diced
1 tsp minced garlic
1 lb ground beef (I have used deer)
2 c. whole milk
1 c. beef broth
1 14.5 oz. diced tomatoes
1 c. tomato sauce
1 TBSP Worcestershire sauce
1 tsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. black pepper
8 oz. elbow macaroni
2 c. shredded cheddar and Monterey Jack cheese.
- In a large cast iron skillet, heat oil over medium-high heat. Add onion, bell pepper, and garlic. Cook about 5 minutes, or until vegetables are tender.
- Add ground beef (or deer) and cook until brown and crumbly.
- Stir in milk, broth, tomatoes, sauce, Worcestershire, mustard, salt, pepper. Bring to a boil.
- Reduce heat to medium-low and add pasta. Cook for 15 minutes, stirring occasionally, until pasta is tender.
- Stir in cheese until melted.
