Banana Bread/Muffins

 Banana Bread/Muffins
(makes 1 loaf or 1 dozen muffins)


These muffins are great to whip up when you have those overripe bananas that you're not sure what to do with.  I love that the ingredient list is so simple - I always have what I need on hand!

2-3 overripe bananas
1/3 c. vegetable oil
1 egg
1 tsp. vanilla
1/2 c. sugar
1 c. flour
1 tsp. baking soda
  1. Preheat oven to 350 degrees. Spray loaf or muffin pan with cooking spray.
  2. In a mixing bowl, mash bananas.
  3. Add oil, egg, and vanilla and stir.
  4. Add sugar, flour, and baking soda.  Mix until combined.
  5. Pour mixture into prepared baking pan and bake.  Loaf: 30-40 minutes, or until inserted toothpick comes out clean.  Muffins: 15-18 minutes, or until tops are golden brown.
