Banana Bread/Muffins
(makes 1 loaf or 1 dozen muffins)
These muffins are great to whip up when you have those overripe bananas that you're not sure what to do with. I love that the ingredient list is so simple - I always have what I need on hand!
2-3 overripe bananas
1/3 c. vegetable oil
1 egg
1 tsp. vanilla
1/2 c. sugar
1 c. flour
1 tsp. baking soda
- Preheat oven to 350 degrees. Spray loaf or muffin pan with cooking spray.
- In a mixing bowl, mash bananas.
- Add oil, egg, and vanilla and stir.
- Add sugar, flour, and baking soda. Mix until combined.
- Pour mixture into prepared baking pan and bake. Loaf: 30-40 minutes, or until inserted toothpick comes out clean. Muffins: 15-18 minutes, or until tops are golden brown.
