Country Ribs with Peach Barbecue Sauce
(serves 4)
2 small peaches, chopped
1 tablespoon butter
1/2 cup brown sugar, divided
2 tablespoons orange juice
1 teaspoon vanilla
3/4 cup ketchup
1 teaspoon paprika
1/2 teaspoon crushed red pepper
1 teaspoon black pepper
1 teaspoon minced onion
1 teaspoon garlic powder
3 pounds country-style ribs
- Preheat oven to 220 degrees.
- Combine pepper, onion, garlic.
- Pat ribs dry and sprinkle with salt mixture. Place ribs in glass baking dish. Add a small layer of water to the bottom of the dish.
- Bake covered for 3 hours.
- In a small skillet, melt butter over medium heat. Add peaches and 1/4 cup of brown sugar. Cook, stirring frequently, until peaches begin to soften.
- Add orange juice and vanilla. Cook until peaches are soft. Using the back of a spoon, mash peaches.
- Remove from heat. Add ketchup, remaining 1/4 cup brown sugar, paprika, and crushed red pepper. Stir until sugar is dissolved.
- Brush ribs with peach sauce and finish on grill.
