Grilled Zucchini Boats
(serves 2-4)
3 tablespoons olive oil, divided
1 lb ground beef or turkey
1 small onion, diced
1 green pepper, diced
2 c. salsa
1 c. shredded cheddar cheese
3 medium zucchinis
salt and pepper, to taste
- Preheat grill or oven to approximately 400 degrees.
- Slice zucchini lengthwise and scrape out seeds in center. Drizzle with 2 tablespoons olive oil and season with salt and pepper.
- In a medium skillet, heat 1 tablespoon olive oil. Saute onions and pepper until translucent.
- Add ground beef or turkey and cook until browned.
- Remove from heat and add salsa, mixing to combine.
- Place zucchini face-down on grill or baking sheet in oven. Grill/bake for 8 minutes.
- Fill zucchini boats with ground beef mixture and sprinkle with cheese. Return boats to grill or oven and bake until cheese melts, about 8 minutes.
