One of the qualities I love about cast iron is its ability to cook evenly, which means the perfect pizza crust. Put the crust inside a skillet for deep dish style or flip the skillet and use the back side for regular style. Either way, cast iron makes for a pizza-perfect crust.
Here is my go-to crust recipe:
Pizza Perfect Crust
(makes 2 pizzas)
1 package yeast
a pinch of sugar
1 1/2 cups warm water
3 1/3 cups flour
2 tablespoons olive oil
a pinch of salt
- Preheat oven to 400 degrees.
- Mix yeast, sugar, and water. Let sit until bubbly (10 minutes).
- Add flour, olive oil, and salt. Mix with a fork until combined and dough forms.
- Let dough sit for 1 hour to rise.
- Dump onto floured surface and divide into two portions.
- Stretch dough to desired size and shape.
- Top with preferred pizza toppings.
- Bake for 20 minutes or until crust starts to brown.
Enjoy!
I've never thought to flip my skillet over to make a flat crust--such a good idea!
