This dish is one of my best discoveries. It's like glorified mac n' cheese, and the sausage and hash browns make it satisfying enough for the main (maybe only) course for dinner.
Easy Cheesy Hash Brown Casserole
(makes about 8 servings)
2 tablespoons vegetable oil
1/2 pound smoked sausage, chopped
1 (30-oz) package frozen shredded hash browns, slightly thawed
1 (8-oz) container sour cream
1 (7-oz) jar diced pimentos, drained
3 cups shredded sharp cheddar cheese
1/2 cup whole milk
1/2 cup chopped green onion
2 teaspoons ground mustard
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 eggs, beaten
- Preheat oven to 350 degrees. Prepare a 2 1/2 quart baking dish with cooking spray. Set aside.
- In a large skillet, heat 1 tablespoon oil over medium heat. Add half the sausage and half the hash browns. Cook until lightly browned, about 5 minutes. Spoon into a large mixing bowl.
- Repeat with the other half of sausage and hash browns. Add to the mixture in the mixing bowl.
- Combine remaining ingredients with sausage and hash browns in large mixing bowl.
- Spoon mixture into prepared baking dish. Bake uncovered for 30 minutes or until cheese is melty.
