Sausage and Sweet Potato Frittata

I tried this recipe for the first time and was pleasantly surprised.  I don't normally care for sweet potato (actually, I can't stand it), but this had great flavor!


Sausage and Sweet Potato Frittata
(serves 4)

1 (16 oz) package pork sausage
3 cups thinly sliced sweet potato (I used 3 medium potatoes)
1 medium tomato, halved and sliced
1/2 teaspoon minced garlic
1/4 teaspoon parsley
12 eggs, beaten
1 1/2 teaspoon salt
1/4 teaspoon crushed red pepper
1/2 cup Parmesan cheese

  1.  Preheat oven to 350 degrees.
  2.  In a 12-inch cast iron skillet, cook sausage over medium-high heat, stirring occasionally until brown and crumbly.
  3. Add sweet potatoes and cook until tender, about 8 minutes.
  4. Stir in tomato and garlic and cook 1 more minute.
  5. In a mixing bowl, combine parsley, eggs, salt, red pepper, and Parmesan.  Add to skillet and cook until bottom is set, about 2 minutes.
  6. Transfer skillet to oven and bake 12-15 minutes.
